A Savory Empanada

What You’ll Need:

Empanadas originated in Spain and this recipe offers a flaky, savory baked version you are sure to love!

For the Dough:

1 cup water

1 1/2 sticks butter

2 3/4 cups flour

2 teaspoons salt

Pinch of paprika

For the Beef Filling:

3 tablespoons olive oil

1 pound ground beef

1 yellow onion

½ red bell pepper

½ green bell pepper

½ cup frozen peas

2 cloves garlic, finely minced

1 teaspoon oregano

1 teaspoon salt

1/2 teaspoon paprika

1/2 teaspoon red pepper flakes

1/2 teaspoon ground white pepper

1/2 teaspoon ground cumin

¼ cup beef broth

1-2 tablespoons tomato paste (to preference)

1 small russet potato, peeled, finely diced, and boiled

3 scallions, trimmed and chopped

1/2 cup shredded monterey jack cheese

For the Egg Wash:

1 egg

3 tablespoons water

The How To:

For the dough:

1. Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper

2.Over medium heat add the water and butter unter butter is melted.

3.Whisk together flour, salt, and paprika

4.Pour a little of the warm butter mixture in and mix with your fingertips to make a wet paste. Pour in remaining liquid, and work the dough with your hands until you get a wet, oily dough. Wrap the dough in plastic and refrigerate for at least 2 hours.

For the filling:

1. Heat 2 tablespoons of oil in skillet over medium heat. Saute beef, cooking until brown

2. Reserve 2 tablespoons of drippings. Remove beef and set aside.

3. Saute onion in drippings and olive oil for 10 minutes, then add bell peppers, peas, garlic and seasonings.

4. Add beef broth to pan, followed by tomato paste.

5. Once dissolved, mix beef and potatoes, remove from heat.

To assemble:

1.Roll dough with hands into golf ball sized circles

2. Roll out dough onto a floured surface into 5 inch diameter circles

3. Place 2 tablespoons of filling into center of each dough circle. Add pinch of scallions on top, and sprinkle with cheese.

4. Brush small amount of egg wash over one half of the edge’s border. Fold dough over and press edges firmly. Press edges down firmly and crimp with fork.

5. Place empanadas onto prepared baking sheet. Lightly beat together the egg and water. Brush the empanadas gently with the egg wash.

6. Bake empanadas until golden brown, about 20 minutes. Enjoy!
